Ex-Popeyes, Yellow Cab chief Roy Quejada takes helm as new COO of Potato Corner

Former Popeyes Philippines president and CEO Roy Quejada has been appointed chief operating officer of Shakey’s Pizza Asia Ventures unit Potato Corner effective April 30, 2026, bringing over 25 years of restaurant leadership experience to the role.

He replaces Jose Arnold T. Alvero, 63, who is retiring as COO and business unit head of Potato Corner after years of steering the group’s expansion.

Shakey's Pizza Asia, backed by the Po and Gokongwei families, is one of the country’s largest restaurant groups, overseeing  brands such as Shakey’s Pizza, Peri-Peri Charcoal Chicken, Potato Corner and R&B milk tea.

Proven operator

Quejada has built a career scaling quick service and casual dining brands, most recently leading Popeyes’ growth in the Philippines. 

He previously served as COO of Yellow Cab Food Corp. and Army Navy Burger Inc., before taking on leadership roles at Domino’s Pizza Philippines and Kuya J Group.

Track record  

Across these roles, Quejada has focused on improving store performance, strengthening franchise systems, and driving expansion, making him a seasoned operator in a highly competitive sector. 

He also founded R/Q Management Consultancy and holds a Certified Franchise Executive designation, underscoring his expertise in franchise governance.
