SM Hotels & Conventions Corp. (SMHCC) is spotlighting Iloilo’s culinary heritage through a new initiative to boost food tourism. 

Its Park Inn by Radisson Iloilo recently staged Beyond the Plate: A Masterclass in Gastronomical Storytelling” in partnership with the Iloilo City MICE Center. 

The big picture

The full-day workshop brought together content creators, students, and media professionals to sharpen their skills in food writing and visual storytelling while celebrating the city’s UNESCO Creative City of Gastronomy status.

The masterclass is part of SMHCC’s wider drive to champion authentic Filipino cuisine and showcase the rich culinary traditions of each region. 

“This initiative highlights not only our culinary treasures but also our role as storytellers of Iloilo’s rich food heritage,” said Iloilo City Mayor Raisa Treñas. “Food is not just food—it is culture, memory, and identity.”

The event opened with an urban farm tour led by Chef Cidj Jalandoni, giving participants a firsthand appreciation of food origins. Dr. Hazel Palmares Villa provided a deep dive into the “Elements of Food Writing & Sensory Storytelling,” while SMHCC vice president for quality and sustainability Leah Magallanes led a session on breaking down flavor profiles.

Wine appreciation was tackled by Park Inn Iloilo GM Rouel Guanzon, and award-winning photographer Kristian “Kris” Cruz shared mobile food photography techniques. Participants then tested their skills in an Output Challenge featuring dishes from Ani Restaurant’s Heritage Menu.

What’s Next

Guanzon underscored the collaborative spirit of the event: “This workshop is more than just a gathering; it is a clear testament to our shared commitment to Iloilo… We believe that true progress is built on collaboration, and this event is a powerful symbol of what we can achieve together."

The Beyond the Plate workshop series will continue in partnership with the Iloilo MICE Center, aiming to upskill talents and strengthen Iloilo’s gastronomic identity as it upholds its UNESCO recognition. —Ed: Vanessa Hidalgo
